Then today’s recipe will be one to save. We are going to talk about taco stuffed peppers. A twist on traditional tacos that will have you wanting more. Let’s get into it.

Why Choose Taco Stuffed Peppers?
First things first, it’s a quick and easy recipe. Taco stuffed peppers are a great way to shake up taco night. They are colorful, nutritious, and can be customized to fit your dietary needs. This is a nice way to add veggies to dinner. The kids may or may not notice, but it’s pretty hard for them not to notice when it’s being served in a pepper instead of a taco. You can fill the pepper up with your choice of ground meat and add their favorite toppings and they’re sure to love it.
Ingredients
The ingredients are so simple you are going to wonder why you haven’t made them before. I doubled the recipe for my family of 6. You should get 8 servings when doubled. The ingredients needed are
- 8 Bell Peppers (any color) Green will be a tad more bitter than the others.
- 4 tablespoons Olive Oil
- 1 whole onion
- 2 pounds of beef
- 2 teaspoons of chili
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1 or 2 cups of cheese
- black beans
Prep/ steps are quick and easy for this recipe

The steps are pretty easy to follow. The most work you’re doing is getting the toppings ready for the meal. Below are the steps.
- Preheat oven to 400 degrees
- Cut the bell peppers in half (lengthwise). Get all the seeds and core out of each pepper. Place peppers on a pan cut side facing up and bake until tender about 15-20 minutes.
- While cooking the peppers heat oil in a large pan. Add onion and cook until soft. Do not brown.
- Add the meat to the pan and cook until the meat is browned and cooked all the way through. Once the meat is broken up and cooked through drain off the extra grease. After add your seasonings. (chili powder, cumin, oregano, and salt).
- Once peppers are done pull them out of oven and turn on broiler. If there is liquid in the pepper drain with tongs. Divide the taco filling among the peppers and sprinkle with cheese on top.
- Put in the oven on broiler and cook until cheese has melted. You don’t want the cheese to burn so make sure to pay attention.
When I was making the peppers, I cut just the tops off of mine. I guess I skipped over the part where it said to cut the pepper in half. It was still delicious, but I’m sure I would have enjoyed it even more if I would have followed the recipe. Top it all off with salsa, sour cream, tomatoes, lettuce or any other topping you choose. A quick and easy recipe to say the least.
Review
All in all, my experience making this meal was fantastic. The peppers were very yummy, and I honestly prefer the pepper over the taco shell. For one because it’s more nutritious and it still gave that nice crunch. Maybe that’s because of the way I cooked them. It was honestly so filling I couldn’t even finish a whole pepper.
You can make this meal vegetarian by swapping the meat for quinoa or rice and extra beans. You can add in hot sauce or jalapenos to make it more spicey. Also take note that to make the dinner even more quick you can prep the meal ahead of time. This just means cutting all peppers and toppings and getting ready any other ingredients that you’ll need.

How would I rate this quick and easy recipe?
I rate this meal an 8 out of 10 because although it is yummy, quick, and nutritional, I wish I added more toppings. It still has amazed me how filling it was and how I didn’t need seconds. I let my mom try some too and let’s just say she finished it all. She loved it.
