This chicken rice casserole will leave you wanting more
Being a mom who can’t use dairy or eggs in my cooking, has been challenging. Especially when it comes to making casseroles. This is one casserole recipe I’ve come across and the family loves it. It comes out like a casserole and not crumbly or not sticking together.
The casserole has flavor and has carrots which adds a veggie in there. If you or your kid isn’t a fan of carrots you won’t even taste them in this dish. The chicken is just the right size (depending on how you cut it) and the rice makes it even heartier of a meal.
Ingredients for The Dairy and Egg Free Chicken Rice Casserole

For this recipe I have doubled the ingredients. I cook for a family of 6 so I wanted to keep the recipe how I would make it for my family. If you’re a large family, these ingredients should be perfect. If you are a smaller family you can cut the recipe in half and it will still be great.
For example, I used 2 pounds of chicken. If you’re a smaller family you would just cut it in half and use 1 pound of chicken.
- 2 lb. Boneless Chicken Thighs
- 2 C. Basmati Rice
- 2 Med. Onion
- 4 Med. Carrots (shredded)
- 4 C. Chicken Broth
- 2 tsp of fave Chicken Seasoning (more if you like)
- 2 tsp. Of Salt & Pepper
- 1/8 tsp tumeric (optional for color, plus good health benefits)
These ingredients are simple and you don’t need anything out of the ordinary. You don’t even have to hunt any ingredients down for the recipe. Easy to find.
Now it’s time to make the chicken
Now that you have your ingredients it’s time to learn how to make dairy and egg free chicken casserole. Now I am no expert on cooking. I’m just a mom finding tried and tasted recipes. Bringing you a review and honest opinion about if it’s tasty or not.

For this recipe you’ll need to:
- Preheat your oven to 450 degrees f.
- Next, in a large skillet cook your onion with oil over medium high heat. (I use avocado oil, it can better withstand high heat.
- Then, heat the onions for 3 minutes. Add the carrots and cook for another 3 minutes.
- Add the chicken, season it with your fave seasonings and cook for 5-7 minutes.
- Next, transfer the chicken to a large casserole dish. Add the rice and chicken broth. Stir to get everything mixed just right.
- Last cover with aluminum foil and bake for 40 minutes. (I sometimes have to use a pan if I am out of aluminum foil. It still comes out the same).
Pretty quick and easy.
What should I pair with it?
For this casserole dish you don’t have to pair it with anything if you don’t want to. You could just eat the chicken casserole the way you made it. Or you can add a veggie on the side.

If you aren’t satisfied with the amount of veggie in this dish then you can always add another one on the side. Such as broccoli, green beans, asparagus, or just another loved veggie in your house.
Salads also go really well with any dish in my opinion. A simple salad with cucumbers and tomatoes and dressing will do it.
Rating and Review Dairy and Egg Free Chicken Casserole

Overall, this dish was easy to make, is healthier than most casseroles, and tastes delicious. It’s one of our favorites in our home and is made often. If I were to give a rating out of 10 I would give it a solid 8. 8/10. Just because you don’t get that savory type of comfort food feeling when you eat it. That southern cooking haha.
But I can’t blame that on the recipe. Finding dairy and egg free casseroles that taste amazing are hard to come by. This recipe definitely gives us an option for a quick, large meal that everyone can eat. Give it a try.
