Every now and again it’s good to make something new for breakfast. The usual oatmeal, cereal, or pancakes for breakfast can get old. That is why I am glad to have come across this dairy free breakfast recipe. Berry Oat Bars.

What ingredients will I need?
The ingredients you will use are simple and may already be in your kitchen. They are coconut oil, all-purpose flour, quick oats, maple syrup, salt and raspberry preserves.
The coconut oil can be replaced with butter if you’d like. Just know coconut oil is very nutritious and if you aren’t allergic to it, it can be beneficial to your health. Maple syrup is the best flavor to use in this dairy free breakfast recipe. But you could use honey if that’s what you prefer or have. You don’t necessarily have to use raspberry preserves either. You could use your favorite flavor jam you like.
How do I make dairy free breakfast oat bars?

This recipe takes no time at all. Most of the ingredients will be mixed together in one bowl. There is no special equipment needed at all.
First things first, you’re going to melt the coconut oil in the same bowl you will use to mix everything together. Once the coconut oil is melted you are going to throw all other ingredients in the bowl, EXCEPT for the raspberry preserves. Mix until combined. You should have a slightly crumby mixture.
Second, you will press about 2/3 of the mixture into the bottom of your pan. Then, spread the preserves on the mixture. Leave a border around the outside of the mix so that the preserves do not get burned by the pan.
Last, take the rest of the mix and spread it over the preserves. Lightly press down so the crumbs hold together and not fall apart. Bake this in the oven for 25-30 minutes until the top is lightly browned. Slice and serve.

You may or may not know that there are two kinds of syrup. There’s the table syrup such as Aunt Jemima, Mrs. Buttersworth, Log cabin or others. Then there is real maple syrup. 100% pure maple syrup. Brands like Maples Grove, Spring Tree and others. To know the difference simply look at the ingredients. If there is anything other than 100% maple syrup than it is not real syrup.
Now you may be thinking why is she telling me this. I’m telling you because there is a huge difference between table syrup and real syrup. The table syrup such as Log Cabin has high fructose corn syrup in it, caramel color and other ingredients that are not needed. These ingredients have been shown to cause harm to the human body and could potentially lead to diseases. 100% maple syrup has no harsh ingredients and is natural.

Benefits of maple syrup
The benefits of Maple syrup are that it’s a natural alternative to sugar and contains antioxidants and nutrients like manganese and zinc. Syrup has a lower glycemic index which means it may cause a slower rise in blood sugar compared to table sugar. Maple syrup also has anti-inflammatory properties which is great for reducing free radical damage that can cause inflammation and lead to various diseases. How to store this dairy free breakfast?
According to the original recipe you can place the oat bars into a plastic baggy with a paper towel to keep them fresh. The paper towel will help keep them from getting soggy. The oat bars can be stored like this at room temp for up to 5 days or in the fridge for up to 8 days.
Dairy- Free Oat Bar Recipe
Ingredients
- 1/2 cup coconut oil
- 1 1/2 cup all-purpose flour
- 1 1/2 cup quick oats
- 1/3 cup maple syrup
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup raspberry preserves
Instructions
- Preheat oven to 350 degrees F. Spray 8×8 baking pan with nonstick spray.
- Mix all ingredients in a large bowl, except for preserves.
- Using hands press 2/3 of the mix into the bottom of the pan. Making sure it's even.
- Gently spread the preserves, leaving a border around the outside. Don't let the preserves touch the side of the pan.
- Crumble the rest of the mix onto the preserves and lightly press so the crumbles will stay in place.
- Bake for 25-30 minutes until lightly browned.
- Let cool in pan. Cut and serve.
