Crunchy Comfort: The Egg-Free Guide to Baking Perfect Apple Crumb Muffins

Here at Domestic Mom Bliss, I’m all about baking dairy and egg free for my little ones and even myself. These Apple Crumb Muffins go at the top of my go to list for muffins.

At my house we eat muffins for breakfast and as a snack. I try my best to make majority of our food from scratch and at home. I started this journey about 5 years ago and it honestly hasn’t gotten much easier.

Trying to find recipes everyone can enjoy has been a challenge. That is why I created Domestic Mom Bliss. To give readers a one stop blog to the best recipes that I find across the web. That have been approved by the entire family.

Ingredients

In order to create egg free recipes, you will usually need flax seed meal or applesauce. For this recipe we are going to use both.

Other ingredients for the muffins are vegan butter or oil, flax seed meal, sugar, pure vanilla extract, salt, flour, baking powder, baking soda, and cinnamon.

Now the recipe I went by used 2 large eggs. Instead of using eggs because we are dairy free, we are going to use 2 tablespoons of flax seed meal. Mix that with 6 tablespoons of water and let sit for about five minutes.

If you are out of butter don’t worry you can use oil instead. It calls for 1/3 cup of melted butter. To sub oil, you will use 1/4 cup of oil. I use virgin olive oil, light tasting for baking.

Also, just a side note, when using baking powder go for aluminum free. We should not be ingesting aluminum, but if that’s all you have you can use it. I use Rumford Baking Powder. For the crumb topping the ingredients needed are: 1/4 c brown sugar, 2 tablespoons of sugar (I use cane sugar), 1/2 teaspoon of cinnamon, 1/3 cup of all-purpose flour, and 2 tablespoons of butter melted.

How to make them?

  1. Preheat oven to 350 degrees.
  2. Use a muffin pan. You can spray with cooking spray.
  3. Mix together the applesauce, melted butter, and flax seed meal until combined.
  4. Stir in the sugar, salt, and pure vanilla.
  5. Stir in the flour, baking soda, baking powder, and cinnamon until combined.
  6. Put the batter into the baking pan.

When putting the batter into muffin pans, I always stay around half full unless I have more at the end of filling all the muffin cups.

Directions for the Crumb topping are:

  1. Add all dry ingredients together and stir until combined.
  2. Pour in the melted butter into the dry ingredients and stir.
  3. Sprinkle the crumb topping on to the muffins. It suggests using about a tablespoon per muffin, but you can do less if you want.
  4. Bake for 20 minutes.
  5. Let them cool and enjoy!

Rating

These were super easy to make and so yummy. I can literally eat the whole pan myself, but I think my kids would be upset at that. Subbing in the flaxseed meal didn’t make a difference. It was soft and the top gives that nice crunch.
