Strawberry Oat Bars for Toddlers and Kids: Delicious!

So, you’re bored of the regular breakfast routine and want to try something new. Or you are into baking and like trying out new recipes. Either way, you should definitely try out strawberry oat bars. This recipe is great for toddlers, kids, and even adults.

Strawberry Oat Bars are so tasty you’ll have to make seconds. This is one of the bets recipes I’ve tried. Read below for ingredients, recipe, review and rating, and to find out who created the original recipe.

Ingredients for Strawberry Oat Bars

The ingredients are super simple. You could have majority of ingredients in your pantry and not know it. Here are the ingredients for the bars:

  • 1 cup of old fashioned rolled oats
  • 3/4 cup of unbleached all-purpose flour
  • 1/3 cup of light brown sugar
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 6 tablespoons of vegan butter
  • 2 cups of diced strawberries
  • 1 teaspoon cornstarch
  • 1 tablespoon of freshly squeezed lemon juice
  • 1 tablespoon cane sugar

This is optional but if you would like to add vanilla glaze you can use:

  • 1/2 cup powdered sugar
  • 1/2 teaspoon pure vanilla extract
  • 1 tablespoon milk

A lot of the recipes I find I have to tweak the ingredients just a little because I have a child who is allergic to eggs, dairy, peanut butter and more. For butter we sub vegan butter. Some of the options are Earth Balance, Miyoko’s, and Country Crock. The one I recommend is Miyoko’s. It has simple ingredients and no vegetable oil blends.

Step-by-step Recipe

This recipe is not a recipe I came up with I actually got the recipe from another food blogger. I enjoy making these recipes for myself and my family. I review them and give an honest opinion on what we thought about the process, the flavor, and if this will be something to add to the meal list. Below are the steps how to make it.

  1. Preheat oven to 375 degrees F. Line a baking pan with parchment paper. It was recommended to use an 8×8-inch pan. I used a slightly bigger pan, and it came out fine.
  2. In a medium bowl combine the oats (1 cup), brown sugar (1/3 c), ginger (1/4 tsp), flour (3/4 c), and salt (1/4 tsp). Pour in the melted butter and stir until it forms into a crumble, and everything is evenly moist. Set aside 1/2 c of the crumble mixture and press the rest into the bottom of prepared pan.
  3. Spread half of the strawberries over the crust. Sprinkle the cornstarch over top, then squeeze the lemon juice over top and 1/2 tablespoon of sugar. Put on the remaining strawberries and then the other half of the tablespoon of sugar.
  4. Bake the bars between 35-40 minutes. Place pan on rack to cool.
  5. While the bars are cooling you can prepare the glaze. Whisk together the powdered sugar (1/2 c), milk (1 tablespoon), and vanilla (1/2 tsp) until smooth. Drizzle on top.

That’s all there is to it. Easy to make. The most to do is cut the strawberries and that takes minutes. Now all you’re going to have to do is keep everyone from eating it all.

So how do the strawberry oat bars taste?

To be honest, these are the most delicious bars I’ve made so far. My kids from 2-6 enjoy them every time I make them. They do not last long in my home. They are sweet but you can still taste the tang from the strawberries which is great.

They aren’t too hard or too soft. And they look just as great as they taste. You can leave the glaze off if you want to, it still tastes delicious. You can serve these as a snack, maybe for breakfast or a dessert. It is up to you and your family’s style of eating.

How do I store this?

You can store them in your fridge for up to five days. If you would like to freeze them, she says all you have to do is let the bars cool, leave glaze off, and wrap in plastic. Then place in freezer and let thaw in fridge. Once thawed you can glaze if you want to.
