If you’re anything like me, the search for new and exciting breakfast options is never-ending. As someone who loves both a hearty start to the day and trying out unique recipes, I recently stumbled upon a dish that was both fascinating and outside the typical breakfast box: cabbage fritters. Yes, you read that right—cabbage for breakfast. And trust me, it could be a game-changer.
First Impressions
Initially, the idea of incorporating cabbage into a breakfast dish might seem unusual. I certainly was not aware you could make cabbage a breakfast. Cabbage is usually reserved for coleslaws or stir-fries. However, inspired by the rave reviews and the appealing photos I saw on the site, I decided to give cabbage fritters a try. You might be surprised by the outcome.

The Recipe
The recipe was straightforward, which is always a plus in the early hours of the day. It required:
- Finely shredded cabbage
- Flour (I opted for all-purpose, but one could easily switch to any gluten-free variety if desired)
- Eggs
- Milk
- Carrots
- Spices such as salt, pepper, and a pinch of cayenne for a gentle kick
- Onion or scallions

The preparation was as simple as mixing all the ingredients into a batter and spooning it into a hot, oiled pan to fry until each side was golden brown and crispy.

Unfortunately, the recipe I used had egg as an ingredient and I have not gotten around to trying flaxseed meal instead of the egg. So, it was just me, myself, and I that tried these fritters and not the kiddos. These cabbage fritters are going on my list to make on the regular.
